MOORHEAD — Saturday, May 17, marks Constitution Day in Norway, and some in the area are starting the celebration early.

    Among Norwegians, the holiday is known as Syttende Mai. It was in 1814 that Norway gained independence from Denmark.

    Residents at Eventide in Moorhead celebrated Friday by listening to music, dressing in their Norwegian best and eating rommegrot, a traditional Norwegian porridge dish.

    Eventide resident Marcella Gulsvig’s rommegrot recipe is well known.

    When asked what her secret was, she said, “I use whole milk and butter, whereas the real authentic Norwegians use pure cream.”

    Marcella actually taught the chefs at 701 Eateries how to make rommegrot. To say thanks, they named it after her on their menu.
