The fair is a hot spot during Texas-OU day, with fans from both sides creating a lively atmosphere. “Oh my god, it’s packed, so much fun, you got OU fans yelling, you got Texas fans, it’s packed, standing room only,” McKee said.Despite being raised a Longhorn, McKee admitted, “I hate to say it but I’m not betting on Texas this year, I think OU’s gonna come through this year.” Regardless of team allegiance, McKee said the fair is for everyone.”You come to the State Fair of Texas; there’s two things they’re gonna get. A Fletcher’s corny dog, and a Fernie’s funnel cake,” McKee said.Across the midway, Mark Zables, owner of Zables, offers a different fan favorite. His Belgian waffles, topped with whipped cream, strawberries, and powdered sugar, have been delighting fairgoers for two decades. On game day, Zables adds a twist by making waffles in the colors of the two teams.”We make Belgian waffles in the color of crimson and orange, and we’ve done that for two decades.
