In the Swedish coastal town of Varberg, Copenhagen-based Norm Architects have designed Dan Bakstudio, a bakery and café where the craft of breadmaking takes centre stage. Created for baker Daniel Larsson, the project moves beyond the familiar bakery format, presenting a warm and thoughtfully composed environment shaped by experimentation, everyday ritual, and a deep appreciation for the process behind every loaf, bun, and pastry.

    Founded on a spirit of continual learning, Dan Bakstudio serves as both workplace and gathering space. Larsson describes it simply: “Our purpose is to keep improving bread and pastries, one experiment at a time”. Guests are welcomed for coffee and freshly baked goods, yet the ambition extends beyond that of a traditional café. Instead, the bakery operates as an ongoing creative workshop where new ideas are tested, techniques refined, and discoveries shared through the universal language of dough.

    Norm Architects approached the interior with careful consideration for the existing building, whose elongated footprint and limited access to natural light presented a unique set of challenges. In response, the designers created a space defined by softness and openness. Suspended linen shades diffuse light throughout the bakery, while a restrained palette establishes a calm and intimate atmosphere.

    Along the perimeter, seating niches provide quieter corners for conversation and reflection, offering moments of retreat. The arrangement allows guests to experience the rhythms of production firsthand, reinforcing the relationship between craftsmanship and place.

    Every element within Dan Bakstudio has been designed specifically for the project. From the custom granite counter and suspended lighting to the furniture throughout the space, each component contributes to a cohesive whole. Unified through considered materials and understated detailing, the interior presents a contemporary interpretation of Scandinavian design traditions, balancing simplicity and warmth with a strong sense of purpose.

    Part bakery, part café, and part creative laboratory, Dan Bakstudio reflects a commitment to constant improvement, creating a destination where the pleasures of fermentation, craftsmanship, and community come together under one roof.
