
🍅🌶️ Lean pork with tomatoes and peppers in the traditional style! 🐖🔥
Today we bring to your kitchen a classic of home recipes and tapas bars: lean pork with tomato and peppers.
A delicious option that will always surprise your guests!
To give it a special touch, I decided to use pork loin and add mint brought directly from Lebanon. This combination of flavours will transport you to a unique experience that you won’t be able to resist.
Are you ready to prepare this delicacy?
Here is the list of ingredients you will need:
🔹 1 kg of pork loin 🔹 2 onions 🔹 2 green peppers 🔹 1 tablespoon of La Vera sweet and sour paprika 🔹 Cumin 🔹 400 g of crushed tomatoes 🔹 1 tablespoon of chopped mint 🔹 1 tablespoon of sugar 🔹 200 ml of dry sherry or chamomile wine 🔹 500 ml of broth 🔹 Salt 🔹 Black pepper 🔹 Olive oil
Preparation:
1️⃣ In a frying pan, heat olive oil over high heat. Brown the seasoned pork loin, remove and set aside.
2️⃣ In a pot over medium heat with olive oil, sauté the onion and pepper chopped into medium pieces with salt.
3️⃣ Add paprika and cumin, mix well. Add the crushed tomatoes, mint and sugar. Allow the tomatoes to reduce.
4️⃣ Pour in the wine and let it cook for a few minutes. Add the reserved meat, mix and cover with the broth.
5️⃣ When it boils, close the pot and cook for 20 to 25 minutes from when steam comes out of the valve.
Prepare a good loaf of bread because you won’t be able to stop dipping this sauce.
