I noticed that the main ice cream distributor diplom sells chocolate, vanilla and a tress mix of chocolate, vanilla and strawberry but can’t seem to find anywhere that sells just strawberry. Only way I can enjoy strawberry ice cream is to buy the tress which seems like kind of a waste since 2/3rds of the ice cream are flavors I don’t really care for.

It’s not a popular flavour by its self. Most will have vanilla ice cream with fresh strawberries or strawberry sauce.
If you ask the manager of your local store, they can order 4.6l tubs of strawberry ice cream from Henning-Olsen.
I believe the closest would be Soft-Shake from Hennig-Olsen, but its small and not the same brand. Hella good tho
Norway grocery stores are a joke. Thats the short version. You dont find much.
Seems you are out if luck. I guess the demand has not been enough for them to keep it as a separate product. Hennig-Olsen also stopped prduction a few years ago
Rørosis has a variant for sale (probably at meny). Most other companies sell it in multi packs or as a sorbet
I mean there’s [this](https://www.hennig-olsen.no/iskrem/merkevarer/sorlandsis/sorlandsis-krone-is-jordbaer/) and [this](https://www.hennig-olsen.no/iskrem/merkevarer/nude/nude-strawberry-80-frukt/). Unless you’re looking for strawberry *flavoured* ice cream.
