Don’t put hot oil into plastic containers, use glass ones. The heat is going to melt the plastic and/or liberate lots of microplastics.

If it goes rancid in a few months you are not storing it properly. Put it in an sealed container with as little air as possible, and store in a dark, cold place.
I have a fryer only for potatoes using it for fries, chips and potatoes for tortilla de patatas, and the oil last a lot. But if you use a oil used previously with breaded or battered food or, the worst, fish, the tortilla de patatas will be unforgettable but not because its deliciousness.
The smell and flavor will tell to you when the oil is degraded and should be replaced.
