Same on Crete now. Basic salads are coming to around €8-9 Euros now in some areas. Increasingly, I now spend based on nutritional & calorific content for €, with choices. It didn’t seem long ago when salads were around €4.50, but actually, that was some time ago. It just shot up by €0.50 each year I came, rapidly, to where we’re around €9 for a salad.

I know at least 3 places in ST Julian where you can have insane value for a salad :
-any kebab : a Large salad is 6-9eur and you can feed a family for 3 days with it.
-The beer garden (just an example, most of small places like this do the same) : simple pasta tuna salad, around 5e. (Don’t expect a fancy grilled Tuna fillet salad obviously )

I recently opened a place and I do a greek and asian salad for 8 each. It costs 2 euros for me to make either one or less.
There’s no way to justify the costs other than greed. Buying wholesale is not very expensive, only expensive for the consumer on the end of the chain.
