


Hey guys, I wanted to give you an update on my khinkali making skills. As some of you know my wife is Georgian, and I love to make khinkali, even thought it takes a long time and the right balance of spices, I think I really nailed it this time! I went to Tbilisi recently, because I miss Georgian food and I wanted to visit my family in-laws. It was her birthday recently and these are the results! :))

For the dough however, if you’d like it to be thinner, let it rest a bit more, and use a tiny bit more flour to help with having an even thinner dough. 😁
I’ve been improving my pelmeni that way recently and it does improve without them being too brittle. But those look great!!

Good, I don’t know if you want critique but really there are just minor mistakes that can easily be corrected.
1. I suspect when connecting the folds you didn’t leave some margin between overlaps. I don’t know how to explain it, look here: [https://imgur.com/a/WAWgrM6](https://imgur.com/a/WAWgrM6) you want to layer the folds as knife pleats, not accordion pleats. This will give the folds direction and flow
2. The handle part is cut off too close to the sack, you should leave more than you think you need. no need to use scissors, you can twist the dough fast and it will pull right off.
More tips: put them in the water slowly, hold by the handle, let it droop and straighten out in your hand, so when it comes out it wont be as flat.
Also, make the dough thinner (at your own risk)
