This correlates well with toaster technology.
Why are you taking NIR spectra of toast? Also, that band you see decreasing is just water evaporating during the toasting process. Very uninteresting IMO. Also not a chemical change.
Please explain your methodology for ridding your house of 10-minute long toasted bread smell.
